Our Vintage Canadian Cheddar has been aged over four years! Cheddar is a firmly pressed cheese with a hard, homogenous texture. The cheese begins life with a flexible texture and slightly acidic, buttery sweet taste. The fat, protein, minerals and ashes gradually break down during the fermentation and aging process, which intensifies the flavors and firms and dries the texture. Made in Quebec, this cheddar does not contain food coloring. Instead, it showcases a lovely, off-white color. Enjoy the full-flavored, intense, tanginess of this excellent Canadian Cheddar.

"I frequent Montreal often and find this a fabulous product to purchase in the States, since I cannot bring it over the Border (I've already been caught once and will not feed the Border Patrol). I adore its taste and texture, and it is consistent when purchased online. Great, simply great."

"I love to sample all cheese that claim to be "super sharp." This was good but I have been spoiled by another brand.I had it in frig forever and am awaiting my new purchase of my fave, then decided to make a maxed up super sonic parmasean chicken..my own way..to use up this cheese, I melted it with butter, milk, and sour cream as the sauce, then topped off the chicken with the actual parm...IT ROCKED!! This cheese is a melting cheese to the spoiled, over-aged cheese heads!"

"Warning!!!! Use of this product can and is addicting. Once it passes your lips no cheddar will ever compare. Can cause spousal conflict when supplies become low."

"It seemed that this batch was not as good as my previous purchase;the label did not indicate the fact that it was aged for four years, somehow it did not feel as the same quality as before."
