        With a record hot summer, I&apos;ve used this pan on my gas cooktop so I don&apos;t have to use the oven.  It&apos;s cooked eggs, seafood, chicken, pasta and veggies beautifully.  Its large 12 inch size, heavy cooking surface and high sides allow me to carmelize over a high temperature, locking in flavor, then covering to cook quickly or braise.
Initially I was intimidated by this pan&apos;s weight, but it has a handle on the side to assist moving the pan from one to another burner with confidence.  
Although it is dish-washer safe, I prefer to wash mine by hand, so I don&apos;t risk scratching that super, shiny finish.  It only takes a paper towel, a little dish detergent and water to make it sparkle again.
I would compare the quality and finish of this pan to other professional style cookware.         &lt;p&gt;
        The first time I used the pan I was impatient to get started and did not let it heat up properly, and of course the food stuck to the pan.  After that letting it heat and then putting in the food it worked wonderfully.  Its also easy to clean and holds large amounts. I would buy it again.         This pan is a bit too big for my largest burner. It hangs over by nearly an inch.
