    We experienced a moment of culinary divinity when we first sampled this double-aged Gouda. Previously, we doubted that any cheese could be more flavorful than Beemster's 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. After we tasted it, the flavor of butterscotch permeated the palate, followed by alternating waves of whiskey and pecan.

    Wow! I thought Beemster Classic was the best gouda I'd ever tasted, and I actually saw this at my local grocery store and had to try. Amazing! I get the butterscotch and pecan stuff stated above, but don't be misled--this is not a sweet cheese in any way. It's very sharp, but you could still eat a block of it in one sitting because it's such an amazingly different flavor. I will definitely be buying this for gifts and myself!!

    This cheese is good but its not as good as some of the other aged Dutch cheeses available e.g. Old Amsterdam. Also, this cheese was sold to us in a triangle shape; very odd for a Dutch cheese. I grew up in Amsterdam, and I have never seen a cheese sold like this.

    This is extraordinary. I put a thin slice on my tongue and let it dissolve. The flavor lingers. It is rich and deep. Awesome !

    What a PLEAASANT surprise! I tasted it at [...] and very advisedly plunked down $[$]pound for a small section. I love how it pleases the palate with just a small piece. Eating pleasure without the temptation to "gorge". It may change my eating habits! A wonderful, genteel snack, after dinner or hors d'oeuvres cheese. Speechless!

    I recently was diagnosed as diabetic, so I've pretty much given up sweets. Cheese has become my dessert, and I have tried several different kinds. I found the Beemster Classic in the local grocery store, and really liked it. Unfortunately, they don't always stock it, so I went online, searching for a reliable source. [...]As much as I like Beemster Classic, this Extra Double Aged Gouda is even better. As others have stated, it has a creamy, almost butterscotch quality. It melts in your mouth just like fine white chocolate. Although I haven't tried cooking with it, I highly recommend it for snacking.

    This double-aged gouda is a strong flavorful cheese - very different from the normal gouda. We compared it with the triple-aged gouda and found both to be on the dry side (as expected), but the double-aged gouda still could be sliced without crumbling, and had a smoother texture than the triple-aged. This cheese is best with a good full-bodied red wine (Australian Shiraz or rich Cab) and a great baguette.

    The heading says it all. This cheese is extraordinary. It is good with everything, on everything, and especially just by itself. Every person I've shared it with has come to buy their own. I'm just one woman, but buying the whole 24lb wheel is actually pretty tempting. You will LOVE it!
